Vinification of Wood
Vinification takes place entirely in small oak barrels, which are an average of 20 years old and are maintained in the Maison’s in-house cooperage, which stocks over 4000 barrels.
From the family-owned forest where Bollinger sources (a portion) of their wood, to their Master Cooper who repairs the barrels, to barrel fermentation, and food pairings with game, the La Grande Anne is the very expression of all their outstanding expertise.
Riddled and disgorged by hand
