薄井一樹先生一直從事葡萄酒侍酒師及其有關教育的工作. 直到2003年才決定回到故鄉接手家族釀酒生意. 他透過對葡萄酒的認識, 將葡萄酒釀酒概念 放入日本酒釀酒之中從而釀出有葡萄酒風格, 發揮甜酸度的極至, 又十分平衡的新派日本酒.更於2011年以復刻米 龜之尾所釀造出的19%精米純米大吟釀 奪取當時的全國新酒評鑑會金賞酒. 成為業界一時佳話!
