Montelobos (mountain of wolves) is an artisanal Mezcal made in Santiago Matatlán produced with 100% organically certified agave Espadín using sustainable artisanal methods. Roasted for 5-7 days in a stone pit, crushed with a tahona, and open airfermented. Montelobos is an unmistakable symbol of Mexican territory and craftsmanship. A unique spirit, meticulously crafted with the same traditional and artisanal mezcal techniques used for 500 years. A small agave varietal, the Tobalá, a subspecies of the Potatorum Family of agave, has broad, spade-like leaves. The compact size of this agave yeilds limited quantities of mezcal and takes 12-15 years to reach full maturation.
